Easy Freezer Burritos

I’ve never done massive quantities of food prep like you see on some Blogs or Amazing Pinterest posts. I really have always thought that would be truly great to have all that food just stored away, so that every day life would be SO SIMPLE! You arrive home after work and in the middle of homework, and getting to practices/games, you simply pop one those nicely stored away freezer meals and in 30 minutes you serve your family a homemade delicious dinner. Literally there are minimal dishes after your family meal, and no fighting about who’s on dish duty.

One thing I have realized is, it is a TON OF WORK taking up several free days. Plus, you also have to have ample freezer space available! My family is notorious for getting tired of things if they have them too much. Too much of a good thing can end up freezer burnt and just wasted. All that time and money just…down the drain.

Spring baseball always has our family really busy, so it’s very convenient when I get a couple hours on a weekend to make up some easy freezer food for my family. They really LOVE these burritos I have made in advance, and stored in the freezer. My girlfriend brought these by when I had foot surgery in January, and it was a GOD SEND! My husband doesn’t cook so there wasn’t a lot meals happening during the first week or two of my recovery. Cooking on crutches is not a fun task. Grocery shopping wasn’t happening at that time either, no surprise at all to me 🤦🏼‍♀️😂

This is what has worked for my family! I just do a few freezer food meals at a time, here and there.

TIP-when you make soup, stew, spaghetti sauce, WHATEVER…make double or triple the amount. (Not time consuming at all. You’ve made your dinner AND you didn’t need to block out a weekend out of your life for MEAL PREP. It just sounds miserable to me, and I have so many other things I want to do with my time, because it just takes more time away from my family.

KUDOS to all of you Moms who food prep for a month of meals, I’m a teensy bit jealous.

Freezer Burritos

2 lbs taco meat

Tortilla shells

Refried beans

Mexican rice-a-roni

Shredded Mexi cheese

Cooking oil-your choice

Wrap all your burritos. Heat A teaspoon at a time of oil in a frying pan on medium, and brown each side. My kids only like just taco meat and cheese. I do 2 separate freezer bags and label, EVERYTHING and MEAT AND CHEESE.

On a whim, my kids come up with a crazy idea to build something!

I’m confessing, I don’t want to deal with it. SO MUCH work for me, TOO expensive, TOO much time that I don’t have, are ALWAYS my reasons.

It’s really hard to stop in the middle of what we are doing, and spend time to make something creative with our kids. I’ll TALK ABOUT MY KIDS COOKING, AND MESSING UP MY KITCHEN ANOTHER DAY!

Grandma Betty’s Legacy

My daughter and the best Great Grandma you could have.

So I have to share with you the first of my Favorite Things Corner. One of my all time favorite human beings is my Grandma. Like seriously you guys, I had the BEST Grandma.

One of the things my Grandma did to show us she loved us was cooking. Almost everything she made was tasty.

You know like when someone else makes you a Sandwich…it tastes WAY better than if you had made it with the same ingredients?! Buttermilk white bread with soft butter and slices of velveeta cheese on it, was like…the most amazing sandwich Grandma always made For me at her house. Definitely made with love, and the reason it tasted so great.

So now I’ll pass along a recipe we all make that was my Grandma Betty’s famous dinner.

Homemade Chicken and Noodle Soup

Not the most amazing picture! But…the most amazing soup 🍲

Boil 1 skinless chicken in pot covered in water, for 45 minutes. Remove chicken and strain broth. Add chicken bouillon for more flavor.

*Egg Noodles*

While chicken is boiling, make noodles.

In bowl combine 1 1/3 cups of Flour

2 eggs

2 eggs full of water

1/2 tsp salt

Mix tother. If dough is too sticky, add flour until it can be rolled out onto a floured surface. Cut into dough, long noodles 1/4”-1/2” wide.

Slowly add noodles to the boiling chicken broth. You may also add carrots or other vegetables you wish. Add 1 tablespoon of parsley leaves. Turn down and continue boiling for 15 minutes. Season with salt, thicken with a mixture of cornstarch and water. Add shredded chicken and serve!

My favorite person

This recipe continues to be our favorite. I’m hoping my kids take it into their homes someday, and continue the tradition.♥️

So that her recipes and the memories of my Grandma stick around, I thought it would be perfect to have a cookbook of all of her stuff. My Mom suggested we add my Great Aunt Lucille’s recipes as well.

I think that food brings us together, and I hope that the recipes from my Grandma and my Aunt, will stir up good memories in us all.

Stop the Mother’s Day Madness

At this point in my life, I’ve 95% given up on expectations for Mother’s Day, and ok…any holiday. I just can’t go through having the let down of expectations that are not fulfilled. Why do we do that to ourselves?! 

I. had. to. stop.

If I want something bad enough, I buy it for myself and call it my Mothers Day gift. I actually…SPELL OUT WHAT I WANT! My husband is not a gift guy, and “His Son” is not either. I’ve done my best to mold and shape that in him, and I’m apologizing now to my future Daughter in Law. I’m so sorry girl, I tried 🤷🏼‍♀️ 

Truthfully, I had to really talk to myself about what amazing things I do have. I have a super awesome husband, I mean, I really do. I’m pretty spoiled. I live a happy little life most of the time. I cannot focus on these tiny things that aren’t perfect. I can’t ask for much more. 

I am so much happier! You know, the things I wish I could’ve learned when I was young🤦🏼‍♀️ But I know now…and I’m over it.

The truth is, we have to make OURSELVES happy. That’s it, that’s the secret.

Mother’s Day morning on the Snake River

This year, we spent the weekend in Pullman, Wa at WSU watching our good friends Son play baseball, fishing, BBQ-ing, and it was just so great. I will say though, my husband surprised me with something I wanted. It was sitting in the passenger seat as we were loading up on Friday to leave town.

I’ve been wanting one for awhile! You know what I’m going to be able to do with this thing! Woohoo!

Going Natural? Ok maybe…slowly:)

As I’ve gotten older I’m really trying to do as many natural health things as possible. After I cured a sinus infection by drinking apple cider vinegar, I was a believer👍🏻🍎

So when a 20 year hair client of mine, gave me her organic recipe to cure some coughing and lung issues with our 4-H pigs, I was happy to try it. She owns an organic dairy and this is what they give their cows that get sick with a cold/cough. They actually have an Organic Veterinarian they use.

Garlic Tincture. Have you ever heard of it? It’s an ancient Tibetan recipe that only has 2 simple ingredients. You can make a couple different ways, but this is how she told me she does it.

2 cups Vodka 

1 cup finely sliced garlic bulbs

*Add both of these items to a mason jar with the lid screwed on tightly. Store in windowsill for 3 weeks. Shake every day. After 3 weeks, drain the liquid into a dark glass or medicinal jar and dispose of garlic. Here is EVERYTHING you need to know about Garlic Tincture.⬇️

We use these droppers to take our 4-5 drops a day in the morning.

We now feed this to our pigs if they get a cough and we also use it as an every day supplement. AND…my 89 year old Father in Law swears by this. He went this Winter without his usual terrible chest cold. He lets me know when he is ready for more!
